For a 700C wheelset you need a 700c tire. No brainer.
I like them thin and lightweight like the Veloflex. 

Before you buy:

Double check your wheel if accepts tubular (“close tube”) or clincher (the “open” one) type or tires and buy accordingly.
How to know? if you rim is kinda of flat most likely is tubular, if your rim has a U shape is a clincher type. 

Brand to search for:

Veloflex, GranCompe, Duro, Servizio Corse tubular, Vittoria white, vintage Michelin, Wolber, Clement.

Michelin and Continental are great tires but the colors combination and those big logos suck. My personal taste.
